Happy Memorial Day!

Happy Memorial Day! May we always remember and never forget that freedom isn't free! Autumn and her Mommy are making the best of our Memorial Day weekend... we both have double ear infections! Ugh!! :( Mine came with a fever! Hopefully the antibiotics will kick in soon for the both of us! I cannot remember the last time I have had an ear infection, it has been awhile... we both have had colds. Bleh, this has been the year of being sick. I heard the first year of preschool is like that, so please, let next year be better. I can't handle another year of the sickies like this...

I really tried to get a picture of her without that darn binkie. Didn't work. She came after Mommy!

It has been sort of hectic around here, so we did not get to planting our sunflower seeds until today! It says on the packet you can plant them up till June in our zone so I guess we are ok.

Auttie's. Hopefully they grow, the dirt was a little clumpy... however, I just didn't feel like going to the garage to get extra soil. I am sure the seeds will grow... Last year we planted Sunscrapers, this year we planted red sunflowers that grow to 5'.

Strawberry Lemon Muffins

Every year that we go strawberry picking, I want to try a brand new recipe... if you are on Facebook, you probably saw my status update where I asked for recipes. I decided to try the Strawberry Lemon Muffin recipe that someone posted from Oh my goodness, DELICIOUS! I made a second batch today (because I still have tons of strawberries) to bring to work tomorrow for someone's 40th birthday.


You will need two bowls. I mixed the wet ingredients in a medium sized glass Pyrex bowl.

Then, I put all of the dry ingredients into my mixer bowl, and mixed them together.

Dump a cup of strawberries into the dry ingredients, and mix slowly briefly (just to coat).

Pour the wet ingredients into the mixer's bowl and mix on low, and mix just until its moist.

Fill muffin cups about 3/4 full with the batter. Bake 25 minutes in the preheated oven, and let cool 10 minutes before serving.

These muffins are SO good, especially warm... delicious! And, the lemon is not over powering, it is just a taste of lemon. So good!

Strawberry Lemon Muffins

1/4 cup vegetable oil
1/2 cup milk
1 egg
1 lemon, zested and juiced
1 cup all-purpose flour
3/4 cup whole wheat flour
1/2 teaspoon salt
1 teaspoon baking powder
1/2 cup white sugar
1/4 cup packed brown sugar
1 cup chopped fresh strawberries

1. Preheat oven to 375 degrees F (190 degrees C). Line a muffin pan with paper liners.

2. In a bowl, lightly beat together the oil, milk, egg, and lemon juice. In a separate bowl, mix the lemon zest, all-purpose flour, whole wheat flour, salt, baking powder, white sugar, and brown sugar. Mix strawberries into the flour mixture. Stir in the oil mixture just until moist. Fill muffin cups about 3/4 full with the batter.

3. Bake 25 minutes in the preheated oven, or until a toothpick inserted in the center of a muffin comes out clean. Allow to cool 10 minutes before removing from the muffin tin.

I finished a 5k race today, and I sure am proud of myself!

In January, I took on Laura's challenge to run 500 miles in 2010, and I never knew it would lead me down the path to running a 5k race, but it did! I was SO nervous last night that I could hardly sleep, and also I have had a cold the last few days so I was worried that I wouldn't be running with all of the strength I would normally have when well. However, I woke up this morning and I felt pretty good but I was ready to RUN!! :o)-

My mom went with us to help take some pictures and to help Jeremi with the kids. Here we are after parking... I was really nervous here!!

Here I am before I left to get in line... When I ran the race I must say the first half mile I was really nervous, but after that I relaxed and finally I enjoyed the run. I had purchased some new music for my iTouch so I tried to focus on that and just my breathing. It was also really hard to run at first because there were so many people and some would slow down, cut in front of you or stop to a walk. Once I got past a mile it was not as crowded and I only had maybe 10 people along side of me at once and I started to enjoy the scenery more. We ran right past the Muny, then we ran around the Jewel Box, back past the Muny and then we were done! They were giving out water at one point on a table and I passed it, but I really should have grabbed a cup because I was really dehydrated by the end of the race. I just never drink water while I am running on the treadmill so I thought I would be ok but I didn't factor in the humidity or just that I was outside. Unfortunately, they did not have anymore water tables set up after that one, so I lost my chance at some water. Luckily there was a nice breeze and I didn't get too hot, but I remember after crossing the finish line and stopping it felt like it was 95 degrees outside for a few minutes! Of course I drank a ton of water before stretching after I finished the race. I must say, I am hooked, I will be running another 5k sometime soon... but, I definitely have a lot of work to do before I will be able to run a 10k. I must say I was amazed at how many kids were running the 5k, too, with their Mom or Dad! And there were parents with jogging strollers pushing two kids up the hills and I was just amazed... My mom said she saw a couple of people throw up after the race in the trashcans out front, one of them finished in 18 minutes! Ick!

I finished the 8:00 race in 32 minutes, 24 seconds with a pace of 9'22" per mile.

Here I am after the race, I was SO thirsty!!!! Thankfully, Jeremi had a water bottle ready for me. (And, no, there wasn't Bud Light in it!)

Finish line!! Nathan finished at around 4 minutes, 12 seconds, but that may not be perfectly exact. I will admit, we did do a little walking a couple of times, but he did run for most of it. Some of the parents were really competitive, I was amazed... for instance, one boy fell down, pretty good... and his Dad picked him up by the arm and told him keep going! Nathan really enjoyed it and he got a ribbon! Yay, Nathan!

5k Race Tomorrow!!

My first 5k race is tomorrow at the zoo, and I am getting a little nervous. I have heard it sold out or came close to selling out so there is going to be a lot of people there! I hope I can handle the hills and I hope it isn't too hot at 8:00 that morning because its going to be 92 I think for the high tomorrow! See, I told you I am getting nervous!! I am sure I will do fine once I get there... and maybe I will buy some new songs for my playlist tonight. Wish me luck!!!!!

Quickie Zoo Visit to get 5k Stuff!

I woke up this morning to the sound of rain and I was so bummed because (1) Nathan's last day of school involved a parent day and so it would be inside and (2) I needed to go to the zoo with kids in tow to pick up my 5k stuff and I didn't want to get soaked!

Luckily, the rain stopped during our zoo visit! Whew!

Before we left for the zoo, I planned some 'indoor' activities that we could do until the 4pm pickup time for the 5k packets. Luckily, we got there right at 2pm and got into the Zooimagination station, which is a free play area for kids. We did this last year but I really doubt either of the kids remember going to it. Autumn loved the little play house they had and she played with the recyclable bowls and lids.

Nathan enjoyed everything, especially the moon sand.

and a big girl/boy one! Autumn played in the water tables for most of the hour. She got a little wet.

Then we took a stroll over the to primate house, I figured this would be good since it was sprinkling. As soon as we got inside, Nathan told me "Monkeys STINK mommy!" haha!

After that, we got a little lost... and spotted flamingos!

And, oh, what the heck, we decided to go in the bird cage!

Last time I was in the bird cage, which was many years ago... the flamingos were in there. I have no idea why they moved them out, but this is what we saw...

It was a quick trip to the zoo, but we made good use of the 2 hours we had to kill before we could pick up my 5k stuff! I am so glad the rain held off, we had a lot of fun!

Nathan's Last Day of School

Today was Nathan's last day of the Preschool 3 class, next year he will be in Preschool 4 and it'll be three half days instead of the two he was in this year. He will have a couple of weeks off, then will have a week of vacation bible school and then he'll start camp which will be two half days every week in June and July.

Mrs. Miller invited all of the parents to attend the last day of school today. Jeremi went for the first half and I went for the second half. Jeremi was lucky enough to get the half where they had snack time, so I missed out on brownies and icecream! Boo!! haha! I came for the last hour and a half and most of the time was spent in the gym. Nathan did really well throwing tennis balls into a bucket.

Mrs. Miller also had a bowling alley set up. Some of the other classes came into the gym for recess and I noticed that Nathan has two friends in the kindergarten class, and they were playing ball. One of them I know because he was hanging out with Nathan when we did the egg hunt, but the other boy I did not recognize. I am so happy that Nathan has some buddies at school!

Mrs. Miller also set up a HUGE bounce house for the kids.

The last thing the kids did in the gymnasium was pull ribbons off of a pinata. Nathan was SO excited, because he knows a pinata equals candy. Yeah, and he is getting his cavity filled tomorrow at the dentist which will not make for a fun morning at all!

Each kid got to pull a ribbon off of the pinata and Nathan got to pull the first ribbon off. Of course, Maiya, the next one up, pulled 6 ribbons and out came all of the candy! Mrs. Miller made a bag of candy for each kid, so sweet!

Then we came back to the classroom and she had the kids sing and dance to a few songs. I really like the song they sang in church, "Kids of the Kingdom". I think I may just buy that for my iPod ;o)- They did one song which involved a bean bag... the blackboard at the school is really neat, its a touch screen.

Well, Nathan is done with school for the summer and next year will be a full year for him instead of a half year! Its amazing how much he learned in school this year, he overcame his sensory issues with finger paint, enjoys coloring, is making friends, learning about Jesus... etc., etc.! So exciting!

First time to Six Flags since we've had kids...

Six Flags used to be my favorite place to visit in high school after I had gotten my license. I had a season pass and rode all of the rides several times each season. I told Jeremi on our drive out there today that we had not been to Six Flags since before I had gotten pregnant with Nathan and I could not believe it! He told me, yeah, last time we went I remember you went down that super tall water slide and almost lost the bottom of your bikini! MEN! The things they remember! Seriously! lol! Well, obviously the water park was not open today, but everything else was and it was not too hot and no lines at all!

We spent a lot of time in the Bugs Bunny National Park, which Jeremi did not even know existed... there are many 'Nathan' sized rides in this area but unfortunately they did not have a kiddie roller coaster and that is what he really wanted to ride! We were surprised to learn that he is only 2" away from riding the Mine Train, which is sort of a good roller coaster for beginners. So, maybe next year!

His favorite ride was the flying airplanes, however, he did not let his airplane fly.

I rode the baby train with Autumn. When we finally went on the big train, Autumn actually fell asleep on me, but then the train tooted its horn and it startled the sleepy girl so bad! Luckily, I got her back to sleep... poor thing!

Nathan played a game and won a Batman cape! He kept running around with it on, he was so proud of it!

Nathan going down a slide... They had two REALLY huge slides that were about 3 stories tall, and they had a worker at the top... unfortunately, he told Nathan he was too short to go down the slides! Poor Nathan! Maybe next year...

Autumn asleep at the end. She was SO tired! It was such a fun day, and Nathan was so sad when it was time for us to go! Both kids fell asleep on the drive home, and so did I (Jeremi was driving)!
