Lucky Link Up Recipe Reveal: Thin Mint Cookie Bars AND Six Other St. Paddy's Day Treats

I decided to join a group of bloggers in a little St. Patrick's Day recipe swap! The recipe that was selected for me to try out and make was Solis Plus One's Thin Mint Cookie Bars! I will admit, I was worried when I saw that her recipe needed a box of THIN MINTS! I had no thin mints and I did not know at that time that Keebler makes a cookie similar to Thin Mints. BUT, alas... my HUSBAND has been hiding a stash of Girl Scout cookies in our very own house! AND, he whipped out a box of Thin Mints faster than I could blink. 

Ingredients
Ingredients:
20 mint Oreos
6 TB melted butter
1.5 sleeves Thin Mints, chopped
1 cup semi-sweet chocolate chips
14 oz sweetened condensed milk


Directions:
1. Preheat oven to 350.  Spray an 8x8 or 9x9 pan with cooking spray.
2. Place the Oreos in a food processor and pulse until they are fine crumbs.
3. In a bowl, stir the Oreos crumbs and melted butter.
4. Press the mixture on the bottom of the baking dish.
5. Layer the chocolate chips over the Oreo layer.
6. Add the chopped thin mints over the chocolate chips.
7. Evenly pour the sweetened condensed milk over the cookies.
8. Bake 30-40 minutes (depending on your oven) until edges are golden and bubbly.


Oreo-Pressed-Down
Place the Oreos in a good processor and pulse until they are fine crumbs. Then, in a bowl, stir the Oreo crumbs into the melted butter. Press into the bottom of a baking dish.


Choc-Chip 
Layer the chocolate chips on top of the Oreo crumb mixture.


Crumb-top
Then, put the thin mints in a food processor and pulse into they are fine crumbs. Layer on top of the chocolate chips.


Condensed-milk
Evenly pour the sweetened condensed milk over the cookies. Bake 30-40 minutes until the edges are golden and bubbly.


Day 16. Beautifully Ordinary. St. Patrick's Day is tomorrow and would not be the same without some BEATIFULLY ORDINARY Mint Oreos! You don't want to know how many I've inhaled today.  but, they're SO goooood!!!  #fmsphotoaday
AND, if you are me... you'll snack on the leftover Mint Oreos while it bakes!
