Trying to add some veggies to my diet!

Veggies
After trying the fruit cube at work, I decided to try the veggie crate. I am trying to add more vegetables into my diet, because honestly, I am not a big vegetable fan… I hate green beans and peas, and most other vegetables (besides potatoes or zucchini) I like raw.

It is just so much fun to open a box and to have so many goodies to try and taste! I have made some fresh romaine salads, I plan to make some zucchini lasagna this weekend… and, the kids have been snacking on the celery, broccoli and cauliflower.

For $19.99 it included:

2 brocolli heads
1 cauliflower head
Bunch of celery (Autumn LOVES celery!)
Green Onions (not sure if I’ll use all of these)
1 red onion
2 Russet potatoes
2 Yukon Gold potatoes
1 crate of cherry tomatoes
1 cara cara orange
1 orange
1 head of romaine lettuce
1 red pepper
1 zucchini
1 yellow zucchini

I am REALLY tempted by next weeks veggie cube (see below)– it even includes avocados and a guacamole kit!!! I am actually a little mad, because it looks so much better then last weeks that I purchased. HOWEVER, I am going to try to get these at least every other week or every few weeks. Its A LOT of veggies! I haven’t gotten a fruit cube in a long while…

10 oz Popeye Spinach
1lb Green Beans
Great Guacamole Mix
1 Sweet Onion
Boston Lettuce
1lb Petite Carrots
2 Sweet Potatoes
1lb Asparagus
2 Green Peppers
1 White Mushrooms
