Spicy & Sassy Hot Corn Dip

I enjoy whipping up dishes for our family BBQ’s, potlucks, etc. during the summer with fresh produce. Today I’m sharing a recipe for a Spicy & Sassy Hot Corn Dip with freshly husked corn, LOTS of fresh peppers, cheese and more!

 

 

How to Make a Spicy & Sassy Hot Corn Dip

 

For this recipe I used these ingredients:

 

  • 4 Ears of Yellow Corn, Cut Corn off Cob
  • 1 Tablespoon of Olive Oil
  • 1/2 Red Bell Pepper, Chopped
  • 1/2 Red Onion, Chopped
  • 2 Green Onions, Chopped
  • 1 Jalapeno Pepper, Chopped
  • 1/2 Avocado, chopped
  • 2 Limes (for Lime Juice)
  • 1/2 Teaspoon Ground Cumin
  • 1/2 Teaspoon Paprika
  • 1/4 Teaspoon Pepper
  • 1/4 Teaspoon Salt
  • 2 Tablespoons Sour Cream
  • 2 Tablespoons Mayonnaise
  • 1/2 Cup Crumbled Blue Cheese

Heat olive oil over high heat in a large skillet. Add corn and cook for 5 minutes, until corn is a little charred. Put corn in a bowl and let it cool in the refrigerator for 10-15 minutes.

 

 

Mix all of the ingredients together.

 

 

Sprinkle a little extra blue cheese and green onion on top and serve.
