It is definitely back to school season right now! My kids went back to school last week and I wanted to surprise them with a special treat after a long day at school. These Back to School Ice Cream Cone Cupcakes made with Blue Bunny® PB ‘N Cone™ were a real treat for their tastebuds and are easy to prepare.

When I think of back to school, I think of all of the pencils I need to buy for both of my kids. I decided to make a cute ice cream cone printable that you can add to a regular sugar cone to make it look like a ‘pencil’.


How to Make Your Own Back to School Ice Cream Cupcake Cones

These Back to School Ice Cream Cupcake Cones are so easy to make! Prepare the ingredients from a cake mix box and bake them into the cones the day or even morning before and then add a scoop of ice cream, a little whipped cream and a chocolate kiss. You’ll have yourself a ‘pencil ice cream cone’!

Blue Bunny® products are available at Walmart stores nationwide. I picked up the PB ‘N Cones™ flavor. There are a lot of new flavors that give classic flavors a fun, unique twist and are perfect treats for the entire family!

UntitledWhile there, I also picked up a package of their Blue Bunny® Bunny Snacks™ in Salted Caramel Pretzel. I also picked up a cake mix box (you’ll also need eggs and oil), sugar cones, chocolate kisses and whipped cream.

Once I got home, I prepared the cake mix according to the directions on the box. I needed the cake mix, oil, eggs and water.

Mix it all up.

Place the sugar cones in a muffin pan. If they tip over, you can place some foil in at the bottom to keep them upright. Fill the sugar cones halfway with the cake mix.

Bake for 21-23 minutes or until a toothpick inserted in the middle comes out clean.

I baked the cupcakes the day before, so they’d have plenty of time to cool off. Once they’ve cooled, print out THIS pencil cupcake printable and wrap around the cone. You will use a small piece of tape to secure it in the back.
