Today I’m going to share a recipe for how to make an Apple, Cheddar and Chicken Salad with a Homemade Apple Cider Vinegar Dressing. I’ve been looking at making better-for-you lunches for myself and this one is easy to prepare and wholesome! I’ll also be sharing how I swapped three ingredients, including Mazola® Corn Oil to make the recipe guilt-free! A recent study has found that adding Mazola® Corn Oil to one’s diet resulted in lower cholesterol levels than Coconut Oil. A previous study found that corn oil can also help lower cholesterol more than extra virgin olive oil. To learn more about the study, see Mazola.com. I think it’s always important to review a recipe and to make swaps, if needed to make it better-for-you!

It’s amazing how you can make a recipe better-for-you by swapping out specific ingredients. For example, for the homemade salad dressing in this recipe, I swapped out Mazola® Corn Oil instead of using other cooking oils. I love that Mazola® cooking oil is made of 100% pure oil with no additives, so the great flavor of your food comes through.

Mazola® Corn Oil has a neutral taste that won’t negatively impact the taste of ingredients, so it lets the natural flavor of your food stand out.

I’ll also share more below about the other ingredients I swapped out to make this recipe more wholesome.

How to Make an Apple, Cheddar & Chicken Salad w/ Homemade Apple Cider Vinegar Dressing
For this recipe you’ll need these ingredients:

Homemade Salad Dressing:

5 tablespoons of Mazola® Corn Oil

1⁄2 Teaspoon Sea Salt

Pinch of Black Pepper

1 1⁄2 Tablespoons Honey

1 Clove Garlic, Minced

1 Teaspoon Dijon mustard

1⁄4 Cup Apple Cider Vinegar

Salad/Salad Toppings:

6 oz. Baby Spinach

1 Fuji Apple, Cut into Thin Match Sticks

4 oz. Cup Diced Low Fat White Cheddar Cheese cubes

1/4 Cup Chopped Walnuts

2 Grilled Chicken Tenders

Combine the Mazola® Corn Oil, sea salt, black pepper, honey, garlic, dijon mustard and apple cider vinegar together to make the Homemade Apple Cider Vinegar Dressing.

Ingredient Swap One
The first ingredient I swapped out was the Mazola® Corn Oil, instead of using other cooking oils that I’ve used in the past. A clinical study showed Mazola Corn Oil reduces cholesterol 2x more than extra virgin olive oil. To learn more about this claim, see Mazola.com. I love that Mazola® Corn Oil is a better cooking oil option for my family.

Ingredient Swap Two
I also swapped honey in place of the regular sugar or maple syrup that I usually use. Honey is full of antioxidants, which neutralize free-radicals in the body and have cell damage protecting properties. Honey is also high in memory and energy enhancing Vitamin B-6 and immune system boosting Vitamin C.

Next, you’ll prepare the salad. Toss the apple, cheese cubes, chopped walnuts and grilled chicken tenders into the baby spinach.

Ingredient Swap Three

The final ingredient swap that I did to make this recipe better-for-you is swapping out the regular cheese with a low fat variety! How easy is that?

Did you know that Mazola® Corn Oil is America’s #1 Selling Heart Healthy Cooking Oil? Mazola® Corn Oil is an all-purpose cooking oil that is a smart heart-healthy choice for your family. Variety of uses include baking, grilling, sautéing, stir frying, or mixing up a marinade or dressing.

Mazola® Corn Oil has a smoke point higher than most cooking oils at 450°F and performs well in a variety of cooking applications, including stir-frying, sautéing, grilling and even baking. Many home cooks may not realize that all cooking oils have a smoke point that, once exceeded, not only negatively affect the food’s flavor and nutritional value.

Next time you’re preparing a recipe, be sure to consider possible better-for-you swap outs, such as using Mazola® Corn Oil.
