One of my family’s favorites is her Beef and Noodles recipe, which has become a regular dinner in our house. Today, though, she’s sharing something for all the chocolate lovers…a delicious chocolate mayonnaise cake! I know the mayonnaise might sound surprising, but trust me, it makes the cake incredibly rich and moist. I’m so happy to let Ashley “take over” the blog today to share one of her most-loved desserts. I don’t know about you, but I am chocolate-obsessed!Today I’m going to share my favorite (and most requested!) chocolate mayonnaise cake recipe.I’m sure you’re probably thinking…mayonnaise? I once thought this was the craziest ingredient to put in a yummy chocolate cake recipe, too. Trust me, you’ll never taste it! It just adds richness to the cake as well as makes the crumb more moist.
I am all about a quick and easy recipe, and this one fits the bill perfectly! I’m so excited to share my chocolate mayonnaise cake recipe with you today! It’s super easy and delicious – two of my favorite things!

The great thing about this recipe is that you don’t need a lot of ingredients!

It’s really quick and easy to whip up, as well. I hope you’ll love this cake as much as I do! 🙂

I add everything into a mixing bowl – no need to separate dry/wet ingredients. I typically use my KitchenAid stand mixer when making this cake, but it works just as well with a hand mixer!

Once the batter is nice and smooth, I add it into a 9×13 pan. I love using a throwaway pan (aluminum foil cake pan) just to make things easier, but you’re welcome to use a glass dish!

Once it’s finished baking, I keep it on the counter away from the oven to let it completely cool.

Once cooled, I split the cake in half and add some of the icing in the middle and then finally frost the top of the cake. I find it easiest to take a dish towel to flip it over onto a cutting board, then carefully cut it down the middle with a sharp knife.

Viola! The chocolate cool whip icing is a bit messy, but it is so tasty and easy to whip up! This cake will disappear quickly at any function, and if you have some picky people in your life, just don’t tell them there’s mayonnaise in it – they’ll never know!If you use my cool whip icing with this cake, it does need to be refrigerated.
Ingredients:
1 Box of Pillsbury Chocolate Cake Mix
1 5.90 oz Package of Jell-O Instant Chocolate Pudding Mix
1 cup Hellmann’s Mayonnaise
1 cup Milk (replaces the water the boxed mix calls for)
â…“ cup Crisco Pure Vegetable Oil
3 EggsInstructions:
1. Preheat oven at 350 degrees.
2. Mix chocolate cake mix, pudding mix, milk, oil, mayonnaise and eggs on medium speed until fully incorporated.
3. Depending on the type of baking pan you’re using, review the suggested baking times on the back of the box and bake your cake.
