This Fiery Bright Dragon Fruit Berry Smoothie with Creamy Chia Pudding is easy to prepare, but it does require a little work the day before serving. This smoothie has two layers, with the smooth and creamy chia pudding on the bottom and the berry sweet dragon fruit and other berries smoothie on the top. Perfect for sipping on with fun straws while loaded on a couch with tons of pillows and a cozy knitted blanket!
*This recipe makes TWO servings.
The day before, you’ll prepare the Chia Pudding (this will be the bottom layer).
Ingredients for the Chia Pudding Layer:
- 1 Cup of Vanilla Almond Milk
- 3 Tablespoons of Chia Seeds
- 2 Tablespoons of Maple Syrup
In a bowl, mix the milk, chia seeds and maple syrup together. Cover and store in refrigerator overnight.
The next day, you’ll prepare the Dragon Fruit Smoothie Layer by following the directions below.
Ingredients for the Dragon Fruit Smoothie Layer:
1 Packet of Frozen Dragon Fruit
1 Cup Frozen Strawberries
1 Frozen Banana
2 Tablespoons Protein Powder
1/2 Cup Apple Juice
3 drops of Liquid Stevia (To Sweeten)
Splash of Lime (Optional)
Combine dragon fruit, strawberries, banana, protein powder and apple juice in a blender. Blend until smooth. Add a few drops of liquid Stevia for a sweeter taste.
To prepare, pour the pudding into two separate cups then top with the smoothie. Add a splash of lime (Optional).
Dragon fruit isn’t something you’d normally pick up at the grocer, but it is truly a superfood chock full of fiber, protein, 0 grams of fat and it helps strengthen your immune system!
We really enjoyed watching How to Train Your Dragon 3 as a family, while enjoying a bowl of popcorn and these delicious smoothies. My daughter was the most excited about the new character in the movie – a female dragon! That is why I purchased Light Fury, the white dragon toy for her at Walmart. The movie gave good closure as the trilogy ended. We’ve enjoyed watching these characters grow from children to adults over time. It was funny, an overall great story and it was even a little emotional (yes, I may have shed a few tears!).
